Last week on the podcast we mentioned a project host Tony Federico and PMR regular Russ Crandall have been working on called Deep Dish. It's a four episode podcast series as well as an ebook that's laser focused on a single meal, the all-american combination of meat loaf, mashed potatoes and gravy, peas and carrots, and apple pie. The show dives deep into the history, science, and cultural significance of each element of the dish, starting with meatloaf, and it's main ingredient, beef. The ultimate version of this dish is then created, using the highest quality ingredients, and a preparation that honors the history of the dish while elevating it with modern culinary techniques. All the recipes start off gluten free, but optional dairy-free, Paleo, Primal, Whole30, Vegetarian, and Vegan substitutions are provided as well.

For today's Paleo Radio bite, we're going to play for you Deep Dish Episode 1: Meat Loaf, and hope you enjoy the deep dive into this seemingly ordinary food. We think you'll find that there's much more to meatloaf than meets the eye.

The Paleo community is, by and large, a secular universe. We frame our perspectives on health and healing in terms of evolutionary mismatches, and lean heavily on science to explain the unfolding of our lives, But most of the worlds population has another world view, one that places god at the center of the universe.

It's often assumed that these two worlds, the secular and the spiritual, are mutually exclusive, but is that necessarily true? Can someone believe in the almighty and in science?

Today's guest, Jordan Rubin, is the author of the international best-selling Maker's Diet books, and is sometimes referred to as America's Biblical Health coach. Jordan's studies of naturopathic medicine, nutrition, and scripture led him to conclusions about diet and health that will sound very familiar to even part-time Paleos.

Gluten is the main protein found it wheat and it's what gives bread its chewiness and pastries their texture, but despite gluten's gustatory appeal, this particular plant protein has been increasingly implicated in a wide range of health conditions ranging from gut related gluten allergies and celiac's disease to neurological conditions like ALS, epilepsy, and autism.

Recently however, Examine.com, the internet's only independent encyclopedia on supplementation and nutrition, broke down a new study which found another reason why you might want to reconsider eating gluten, and to explore why, we're joined by the director of Examine.com Kamal Patel in another installment of Smart Supplementation.

We've seen more than our fair share of gimmicky abdominal exercise machines and over-the-top core training routines. These products and programs consistently promise miraculous results. Six packs in six weeks, inches off your waist with no effort, or improved posture and athletic performance. Do they really work well? Slick marketing can mislead us with doctored before and after photos. Real scientific inquiry is not so easily deceived. In the spirit of deconstructing core training we brought in a real expert on the subject, Dr. Mike T. Nelson.

Dr. Mike holds a PhD in Exercise Physiology, a BA in Natural Science and an MS in Mechanical Engineering, so he definitely knows his stuff.

While competing in Korean Crossfit, weightlifting, and powerlifting competitions, Kenneth Chung discovered Paleo but while he was excited to embrace this new lifestyle, he also discovered that sourcing grass-fed meat wasn't easy.

A chance job assignment consulting for an international meat packing company gave him a crash course in the meat industry, and in 2012, he joined the team behind Bos Creek, a subscription box service that shipped customized boxes of grass-fed meat nationwide.

Always the competitor, Kenneth knew he could do better, and with their just launched Meat Dorks kickstarter campaign, he hopes to change the meat delivery game with source verification, Whole Animal Journeys, and even greater customer customization.

Today on Paleo Radio Bites we're joined by Kenneth Chung, creator of Meat Dorks, to find out more about the project, their mission, and how to cook zabuton, the most popular cut of beef in Japan.

Kids today are expected to sit still, pay attention, and behave like little adults and when they don't, they're diagnosed with ADD and medicated with stimulant drugs. But can you really blame them when most of their calories come from processed food and most of their fun comes from a computer or smartphone screen?

Just as adults get sick when their modern lifestyles run counter to their ancient DNA kids too suffer and what makes it all worse is the sad fact that most of the medical and educational establishment hasn't made this connection. Thankfully however, some doctors are breaking rank and trading in their prescription pads for cooking classes.

One practitioner who exemplifies this is Dr. Maya Shetreat-Klein, a board-certified adult and child neurologist, lifelong foodie, and environmental activist, who from her New York City based practice, has successfully treated hundreds of children with neurological issues with an integrative approach, that includes functional medicine, herbs, mind-body techniques, and homeopathy.

When Aimee Brouillard was a child, she was diagnosed with severe scoliosis and was told that she would never be able to participate in the sports, games, and activities other children her age were able to do.

This advice never sat well with Aimee, and through years of dedicated work learning how to condition, strengthen, and understand her body she has gone on to compete in endurance events like triathlons and has recently found a new passion in strongman competition.

Today on Paleo Radio Bites we're joined by Strongwoman Aimee to talk about her journey from scoliosis to strongman and how the Paleo movement is progressing in her home country of Canada.
