PMR Bites Feature Image


As you all must know, the past few weeks have been tragic, so much so that the word tragic seems insufficient.

When we check the Facebook news feed we're confronted with such unbelievable violence. Violence against gay nightclub goers, violence against African Americans, violence against police, and we feel compelled to address this rift in our collective consciousness as ignoring it and pretending it doesn't exist or didn't happen seems disrespectful to the deceased, their families, and to society at large.

We realize that this is a podcast largely focused on health, exercise, entrepreneurship, and food, but none of these things exist in a vacuum.

We also realize that it can be tempting to hide ourselves from the world by focusing on the minutia of our lives, whether we drank enough bone broth, ate enough kale, or made ourselves sweat. These things are important, personal health is important, but we are all part of a tribe and right now our tribe is not well.

We don't pretend to have any solutions but do know that as humans we are capable of doing good just as much as we are capable of committing acts of evil and we're certain that there is more good in this world than not.

We think our own words are exhausted at this point, so we're going to play something that feels particularly relevant to the moment we are in today.

What you're about to hear is a speech Robert F. Kennedy gave on April 4, 1968 in Indianapolis Indiana. At the time, he was running for the Democratic presidential nomination and while one his way to what was supposed to be a typical campaign rally, he was given the news that Martin Luther King had been shot and killed.

This was before 24 hour cable news and before the internet, so many of the people assembled did not know what had happened to Dr. King. Kennedy's aides, local officials, and law enforcement were concerned about security and the potential for a riot, but he decided to speak anyway and gave the speech from a podium mounted on the back of a flatbed truck.

When news of Dr. King's death broke, there were riots in over 100 US cities including New York, Chicago, Boston, Detroit, and Baltimore, but Indianapolis was not one of them and it is thought that the speech given by Robert Kennedy was one reason why the city, unlike so many others, remained calm in the aftermath of Dr. King's assassination.

63 days after giving this speech Robert Kennedy was also shot and killed, but his words and the impact that they had on the people who heard them lived on.

Our hope in sharing this speech with you today is that Robert Kennedy's words will live in you as well and that in the face of so much tragedy, evil, and despair, you will choose love, hope, and understanding.

The 2016 Summer Olympics will be held next month in Rio de Janeiro Brazil, and along with the gymnastics, track and field, soccer, boxing, and other sports, there's weightlifting.

But unlike the weightlifting most of us are familiar with, Olympic weightlifting doesn't involve targeting specific muscle groups. There is no biceps curl, bench press, or dip, no leg press, hamstring curl, or seated row.

In Olympic weightlifting there are two moves; the clean and jerk and the snatch, that's it, but despite their superficial simplicity, the clean and jerk and snatch require thousands of hours of practice and the patience of a zen monk to master.

On today's show, Stephanie Gaudreau, Paleo Magazine Radio regular and host of Harder to Kill, breaks down the details of Olympic lifting. Why it is her chosen sport, and why the pursuit of Olympic Lifting mastery is worth it's weight in gold medals even if you're not planning on going to the Olympics.

This week, we had originally planned on featuring an interview with Jen Reissman of One Stop Paleo shop, but we couldn't wait to share what we recorded a couple days ago. It's a conversation with Dr. Andy Galpin, a professor at the Center for Sport Performance at California State University and Director of their Biochemistry and Molecular Exercise Physiology Laboratory.

We met at Paleof(x) while moderating a panel called "Swole by Science". He was a featured panelists that struck us by his ability to take complex physiological processes, like how muscle contractions occur thanks to millions of tiny protein filaments called actin and myosin, and to break them down into an understandable and relatable form.

The plan going into this interview was to get Dr. Andy to reiterate the points he made during the panel discussion, but what we didn't expect is to get into some seriously awesome side conversations.

At some point in human history, physical movement became a luxury and gyms opened up to serve exercise to the masses. As our lifestyles got worse, so did our health, and as statistics for obesity rose, some of us continued to dive into the growing exercise industry.
 
Host Tony Federico has been in the fitness industry for ten years and when not podcasting, is the director of a fitness center in Jacksonville Florida serving approximately 500 members and offering a variety of services such as group exercise classes, personal training, massage, free weights, and cardio training equipment. In the past, he coached crossfit and thinks a large part of the crossfit movement is a protest of the traditional fitness model, no pun intended. But going beyond crossfit, there seems to be a growing number of people interested in even more extreme departures from the fitness norm.
 
Obstacle racing, mud running and super spartan events range in size and scope but all advertise how completely dirty you will be when you finish. Far from our sanitary "regular" lives, mud running is a wild romp through physical, mental, and spiritual hurdles.  It totally sucks, but that's the point. Obstacle races take us out of our comfort zone and we pay good money for it. For some participants, this is an occasional catharsis, but for others, it's something more.
 
Today's guest, Hunter McIntyre, is widely considered to be one of the best obstacle course racers in the world. Sponsored by the Spartan Race organization and Reebok, he travels around the world, putting on a display of incredible attitude, confidence, and primal energy wherever races.

One of the very specific benefits of being Paleo podcasters is that we occasionally receive packages of meat in the mail. For some, this might seem odd, but for us it's about as exciting as christmas day. We tear into the cardboard and foam packaging anticipating what sort of meaty delights are hidden inside and given that Paleo is all about quality grass-fed, sustainably sourced, humanely raised, heritage breed meats we're rarely disappointed but sometimes, there's that rare occasion where we encounter a game changer.

This is what happened after we got a package from The Piggery, a pastured pork collective based out of Ithaca, New York. Their rosemary thyme rubbed pork chops were a revelation, pork unlike any we've ever experienced, more like beef or steak than pork, and after that first bite we had to know how they did it, and after this episode of Paleo Radio bites, you will too.

On today's bite we chat with Piggery owner Brad Marshall who shares some of his secrets to making magical pork products.

When we think of physicians we typically think of doctors in white coats and when we think of medicine, we typically think of prescription pharmaceuticals. 

But this particular form of healthcare, one which predominates in contemporary Western culture, is actually a relatively new phenomenon which only took shape in the past 100 or so years. So before the white coats and before the drugs what did people do when they got sick?

Using the plants, animals, and minerals around them, ancient peoples were remarkably adept at maintaining health and often incorporated physical, mental, and spiritual practices into a holistic way of life. Thanks in large part to it's effectiveness, this ancient health practice has found a home in the modern age.

When we last talked to Nick, the company had just secured a contract with a co-packer who could produce bone broth to their exacting standards. Every four years, the elite athletes from all across the globe gather to compete in the Olympic games. Those 17 days are filled with triumph, tragedy, heartbreak, and exaltation. Some rise, some fall, and all of us are entranced.

Most of us watch the spectacle with a sense of awe, a feeling that we are witnessing feats that are incredible, impossible for mere mortals, but for some, watching the Olympics ignites a deep hunger, a drive, and a purpose.

For every Olympian that competes in the games, there are hundreds, thousands, perhaps even millions more who dedicate themselves each and every day to the goal of competing, of winning, of proving themselves to the world and becoming an Olympic athlete.

Today's guest, Joseph Seaman is one of those hopefuls. Born in the UK, Joe now lives in Austin Texas where he trains and competes in the sport of rowing.

From afar, rowing is a graceful endeavor, with streamlined boats gliding across the water, but if you zoom in closer, you'll see that it is a brutal sport that pushes the body and mind to it's limits.

PMR Special Report - 2016 Paleo f(x)


This past weekend was the fifth annual Paleo f(x) conference, and as usual, it was bigger and better than ever before. With dozens of lectures, mastermind panels, cooking demos, and hundreds of vendors it's a veritable Paleo wonderland, but the best part is the people. If you walk in any direction, it's only a matter of seconds before you run into someone exceptional, and that’s not being hyperbolic. That's literally how today's show was recorded.

With a portable mic at the paleo magazine booth, we picked a direction, started walking, and grabbed the first person we came across. The result is a slew of on the spot interviews and conversations that feature everyone from a 14 year old Paleo blogger to a UFC superstar. Since everything was recorded on site, and right in the middle of the action, there is a good amount of ambient noise, but this is what it's like at Paleo f(x). There's always something going on and it's hard to decide what to pay attention to. Inevitably you'll get pulled into someone's orbit and have a conversation you'll never forget.

This is the closest you'll get to Paleo f(x) without actually attending, which we obviously recommend, and if you missed this year's show, or if you were there and just can't wait to go back, this will hopefully hold you over until 2017.

Last week on the podcast we mentioned a project host Tony Federico and PMR regular Russ Crandall have been working on called Deep Dish. It's a four episode podcast series as well as an ebook that's laser focused on a single meal, the all-american combination of meat loaf, mashed potatoes and gravy, peas and carrots, and apple pie. The show dives deep into the history, science, and cultural significance of each element of the dish, starting with meatloaf, and it's main ingredient, beef. Today's guest, Jordan Rubin, is the author of the international best-selling Maker's Diet books, and is sometimes referred to as America's Biblical Health coach. Gluten is the main protein found it wheat and it's what gives bread its chewiness and pastries their texture, but despite gluten's gustatory appeal, this particular plant protein has been increasingly implicated in a wide range of health conditions ranging from gut related gluten allergies and celiac's disease to neurological conditions like ALS, epilepsy, and autism.

Recently however, Examine.com, the internet's only independent encyclopedia on supplementation and nutrition, broke down a new study which found another reason why you might want to reconsider eating gluten, and to explore why, we're joined by the director of Examine.com Kamal Patel in another installment of Smart Supplementation.

Six packs in six weeks, inches off your waist with no effort, or improved posture and athletic performance. Do they really work well? Slick marketing can mislead us with doctored before and after photos. Real scientific inquiry is not so easily deceived. In the spirit of deconstructing core training we brought in a real expert on the subject, Dr. Mike T. Nelson.

Dr. Mike holds a PhD in Exercise Physiology, a BA in Natural Science and an MS in Mechanical Engineering, so he definitely knows his stuff.

While competing in Korean Crossfit, weightlifting, and powerlifting competitions, Kenneth Chung discovered Paleo but while he was excited to embrace this new lifestyle, he also discovered that sourcing grass-fed meat wasn't easy.

A chance job assignment consulting for an international meat packing company gave him a crash course in the meat industry, and in 2012, he joined the team behind Bos Creek, a subscription box service that shipped customized boxes of grass-fed meat nationwide.

Always the competitor, Kenneth knew he could do better, and with their just launched Meat Dorks kickstarter campaign, he hopes to change the meat delivery game with source verification, Whole Animal Journeys, and even greater customer customization.

Kids today are expected to sit still, pay attention, and behave like little adults and when they don't, they're diagnosed with ADD and medicated with stimulant drugs. But can you really blame them when most of their calories come from processed food and most of their fun comes from a computer or smartphone screen?

Just as adults get sick when their modern lifestyles run counter to their ancient DNA kids too suffer and what makes it all worse is the sad fact that most of the medical and educational establishment hasn't made this connection. When Aimee Brouillard was a child, she was diagnosed with severe scoliosis and was told that she would never be able to participate in the sports, games, and activities other children her age were able to do.

This advice never sat well with Aimee, and through years of dedicated work learning how to condition, strengthen, and understand her body she has gone on to compete in endurance events like triathlons and has recently found a new passion in strongman competition.

The word "cider" has it's roots in the ancient hebrew word sekar, or "strong drink" and as apples moved from the mountains of Kazakhstan and Kyrgyzstan, the "strong drink" made from the fermented juice of apples followed.

Cider was brought to America by the pilgrims, and for many years, cider was the beverage of choice for peasants and presidents alike. During the early part of the 19th century however, prohibitionists turned their ire towards cider, smashing kegs and uprooting orchards.

For decades, American cider production was almost nonexistent, but now we are on the cusp of a veritable cider boom. More and more people are looking for alternatives to beer, and as a naturally gluten free product, cider is happy to oblige.

On today's show, we discuss the nature of today's cider business with Robert and David Cordtz, the father and son team behind the Sonoma Cider Company.

While some people are satisfied with the grain-fed, CAFO raised, industrial meat that is passed off as beef in much of our restaurants and grocery stores, there is a growing demand for something different.

In the past, that "something different" might have taken the form of tracking down a local farmer to arrange for the purchase of a "cow share", a whole, half, or quarter steer that required significant freezer space and a big investment.

While this, or better yet, growing your own, likely represents the gold standard for grass-fed beef acquisition, many people don't live in agricultural areas, so access is limited. And even if you do live in a rural part of the country that hosts large domestic herbivores, there's no guarantee that the farmer is following grass-fed and grass-finishing standards, or that he or she will even sell to you.

Thanks to the internet however we now have a third option, from the comfort of our own home, we can purchase carefully selected grass-fed and grass-finished meats and have them delivered right to our door.

Everybody knows that mom does it best; whether it's her homemade lasagna, chocolate chip cookies, apple pie, or if you're Tessemae Vetter, a signature salad dressing.

As the mom of 3 active boys, Tessemae had to figure out a way to get her kids to eat their veggies. She succeeded by whipping up a simple combination of lemon juice, olive oil, mustard, and salt. Tessemae's dressing was not only a hit with her own kids, there are even instances of salad dressing theft perpetrated by her son's friends.

Hearing this story alone would be well worth your time, but what comes next is the real kicker. After years of eating the house dressing, Tessemae's oldest son Greg decided that there really was something special about that signature blend. With a bit of stage craft, Greg convinced Whole Foods, and then his mom to go into business bottling the family recipe and the rest, as they say, is history.

Today we're joined by Tessemae's all natural co-founder, Greg Vetter.
